Job Summary
We are seeking to recruit a passionate and talented Commis Chef to join our two-Michelin-star restaurant, ION Harbour by Simon Rogan. In this role, you will work closely with our team of skilled chefs to prepare and present high-quality dishes that consistently meet our Michelin standards.

Duties and Responsibilities
- Assist in the preparation of ingredients and mise en place for daily service, ensuring all items are of the highest quality and freshness.
- Execute culinary techniques to cook and finish dishes as per the recipes and standards set by the Head Chef.
- Contribute to the artistic presentation of dishes, paying attention to detail and maintaining consistency in plating.
- Maintain a clean and organised workspace, following strict sanitation and safety guidelines to ensure food safety and hygiene.
- Apply solid pastry skills and precision in the preparation and finishing of desserts, supporting the pastry section to deliver consistent Michelin-level quality.
- Work closely with the kitchen team to ensure smooth service and efficient communication during peak hours.
- Continuously seek to expand culinary knowledge and skills through training and mentorship from the senior chefs.
- Assist in quality control measures to ensure that all dishes leaving the kitchen meet our Michelin standards.
- Assist in the monitoring of inventory levels of ingredients and supplies to ensure timely stock rotation and restocking.
- Assist in measures to reduce waste and minimise costs wherever possible, while maintaining high standards of food quality and service.
- Carry out other job-related duties as assigned in support of the restaurant and hotel operations.
Qualifications and Experience
- A minimum of one year’s experience, preferably in a Michelin-starred or fine dining establishment.
- Good communication skills, with fluency in English.
- Excellent time management skills, with the ability to prioritise tasks in a fast-paced environment.
- Enthusiasm and a willingness to learn and grow within the team.
- The ability to work effectively in a high-pressure, fast-paced environment.
- A team player mindset, with the ability to collaborate effectively with others.
Other Requirements
- Ability to perform a physically active role, including standing for extended periods in a hot, fast-paced kitchen environment and handling heavy items such as pots, trays, and deliveries.
Working Conditions
- Required to work shifts, including weekends and public holidays.
